But Why couldn’t Captain Marvel wear the Gauntlet and snap instead of Iron Man, especially when it has been established that she was stronger than Thanos?

The answers lie deeper in the Marvel universe than we can ever hope to dig into…
Captain Marvel Wouldn’t Survive to Snap
First, it has already been established that Captain Marvel is strong, in fact, she is stronger than Thanos. However that is a comic book fact, given there was not just one Captain Marvel. We had Mar-Vell as well, who had also figured out a way to kill Thanos, by going back into time. However, Captain Marvel’s knowledge of the outer realm and cosmic power made her aware of Thanos’s universe.

Carol Danvers still wasn’t able to wear the gauntlet. The reason? She wouldn’t have survived.

Unlike Thor, who is a God, or even Hulk, whose entire formation is ridden by powerful gamma, Captain America or even Captain Marvel, are mere humans. So while they have powers, they are only superhumans. The gauntlet contains power too heavy for them to wield, as the Collector explained to the Guardians.
The source of Captain Marvel’s powers is the tesseract energy, but she herself is a human vessel. Wearing the gauntlet would have destroyed her as the energy of the stones would have entered her being.
So, was Iron Man the only one who could wear the gauntlet and snap not Captain Marvel? Maybe, maybe not.
A Quora theory suggests that there were some chances of him surviving due to his arc reactor which is a vessel in itself, housing the new element Tony created himself. Given the infinity stones too, are always a part of a case or a vessel.
This Was The Only Way
Another theory, a more plausible one, states that when Carol tries to snatch the gauntlet away from Thanos, she starts absorbing the powers of the stone, and even a headbutt from Thanos doesn’t budge her. He eventually takes the power stone and knocks Carol out with it.
Since time was tight and Carol perhaps was unconscious with the effect of being hit by an infinity stone, and Iron Man was the only one around who knew the consequences of a second Thanos snap, he was neither willing to take the risk nor did he want to waste time. Hence, he took the stones and did the third culling snap which led to the end of Thanos and his army.
Other Avengers Who Could Wear The Gauntlet
Logically, the only person who could have survived snapping was Hulk, and he was already weakened by doing it once, so couldn’t do it again. He needed to recover and regenerate his cells completely before using it again and there was not much time for it.
Thor was the next Avenger who could have wielded the gauntlet. However, owing to his PTSD in the Post-Thanos period, his body and mind weakened a lot. So no Point break!
Thus, Tony aka Iron Man, as soon as he got Doctor Strange’s indication of this being a one in a million chance to defeat Thanos, wore the gauntlet himself.

Captain Marvel entered the Marvel universe pretty late, but if you watch the movies in chronological order, she is there since the beginning, though protecting other planets and beings.
Director Joe and Anthony Russo have mentioned before that Endgame was a farewell to many OG Avengers. Hence, any other Avenger had taken a relatively small role.
Well, Captain Marvel was a player but couldn’t change the game this time, because the Endgame belonged to Iron Man. But we know we’ll get to see more of her power in the subsequent MCU movies.
It’s her namesake, after all, and Brie Larson is pretty cool in the character too.
